The BEST Zuccini Bread EVER

I have promised my freinds this wonderful recipe for what I think is the best zuccini bread I have ever tasted, and here it is, please enjoy.
Whenever I have made this and believe me, I make this alot, the recipe only uses 2 zuccini's. Usually I buy small to medium zuccini's.
This is the wonderful tasting bread done and still in the pan. Smells so good.

Here we are, out of the pan and ready to cut.....pop in the mouth and enjoy. Now, on with the recipe: very easy and very good too.
3 eggs, beat and add:
2 cups sugar
1 cup of oil
2 cups of raw zuccini, peeled and grated
ADD:
2 cups flour
1/4 teaspoon baking powder
2 teaspoons baking soda
3 teaspoons cinnamon
1 teaspoon vanilla
1 teaspoon salt
ADD:
1 cup chopped nuts
bake at 350 degrees for 1 hour or until toothpick comes out clean.
2 loaf pans, greased and floured.

Sounds wonderful. I need to bake something to take the chill of just happen to have some frozen zucchini from the summer's bounty. Hmmm...
